Hulled tahini doesn't grind the entire sesame seed and because of this it doesn't contain as much calcium, protein and vitamins as unhulled. Unhulled tahini is made from the entire sesame seed and it the most nutritionary packed type of tahini. Hulled tahini is not as bitter pure tasting as the unhulled type.
